What Is Gelato? Ingredients, Texture, and How It Is Made

Most people grow up on ice cream and discover gelato later as its Italian cousin. They look similar in the case, use many of the same ingredients, and are made with similar equipment, but they are not quite the same product.

Gelato is typically lower in fat, contains less incorporated air, and is served warmer than American-style ice cream. Those differences help give it its dense, smooth texture and strong flavor.

If you are getting into the frozen dessert business, understanding those basics is more useful than memorizing a traditional definition of gelato.

What is gelato?

Gelato is a frozen dessert generally made from milk, sugar, flavoring ingredients and, depending on the recipe, some cream.

Traditional gelato commonly falls around 4% to 8% butterfat. By comparison, U.S. ice cream must contain at least 10% milkfat under the federal standard of identity for ice cream.

But fat content alone does not make something gelato.

Gelato is also commonly produced at about 20% to 40% overrun, meaning relatively little air is incorporated while it freezes. American-style ice cream may run closer to 50% to 100% overrun, depending on the product.

Finally, gelato is generally formulated to be served around 12°F to 15°F, compared with roughly 6°F to 10°F for hard ice cream.

Put those together and you get the basic gelato experience: less air, a denser spoonful, a softer serving texture and flavors that tend to come through strongly.

What ingredients are in gelato?

A basic gelato recipe starts with a few familiar ingredients, but each one affects more than flavor.

Milk usually makes up much of the dairy base.

Cream adds fat and richness, although gelato generally uses less of it than many American-style ice cream recipes.

Sugars add sweetness, but they also affect how firm the product becomes when frozen. Different sugars behave differently. For example, dextrose can influence freezing behavior and texture without adding as much sweetness as ordinary granulated sugar.

Milk solids add body without necessarily adding more fat. Ingredients such as skim milk powder can increase the dairy solids in a recipe and affect creaminess, viscosity and mouthfeel.

Stabilizers and texture ingredients help manage water and keep the finished product consistent through freezing, storage and service. Products such as Fructisoft Texture Improver are designed to influence texture and overrun in frozen desserts.

Flavoring ingredients can take many forms. A shop might use a pure pistachio paste for pistachio, a dark chocolate paste for chocolate, or fruit pastes and preparations for flavors such as strawberry, raspberry or mango.

These ingredients do more than determine taste. Pistachio brings its own fat and solids, chocolate changes the solids and fat in a different way, and fruit brings additional water and sugar. That is why you cannot simply add a new flavoring ingredient to the same base recipe and expect every flavor to behave identically.

Why does gelato feel denser than ice cream?

The biggest reason is air.

When a frozen dessert is churned, air is incorporated into the mix. The increase in volume is called overrun.

If one gallon of mix finishes at 30% overrun, you end up with about 1.3 gallons of finished product. At 80% overrun, that same gallon of mix becomes about 1.8 gallons.

Gelato's lower overrun means a given scoop or cup contains more actual product and less air. That is why gelato usually feels heavier and denser than ice cream even when the portions look similar.

This matters commercially too. If you are opening a shop, overrun affects how much sellable product comes out of every batch and how much product employees put into each serving. That is why cup size, portion weight and finished yield should be considered together.

How is gelato made?

Commercial gelato production usually follows the same basic path: mix the ingredients, pasteurize the mix when required, let it age, freeze it in a batch freezer, then harden, store and serve the finished product.

1. Mix the ingredients

The milk, sugars, cream, base and flavoring ingredients are combined according to the recipe.

This is where most of the important decisions have already been made. The batch freezer can freeze a recipe, but it cannot fix one that is poorly balanced.

2. Pasteurize and age the mix

Many commercial production systems pasteurize the mix before freezing. After cooling, the mix is commonly aged for at least four hours, and many shops prepare it the day before and age it overnight.

Aging gives ingredients such as milk proteins and stabilizers time to hydrate and helps the mix behave more consistently when frozen.

3. Freeze it in a batch freezer

Once the mix is ready, it goes into a commercial batch freezer. This is the machine that turns the liquid mix into gelato.

A batch freezer cools the mix rapidly while a beater continuously moves it against the freezing cylinder. As the mix freezes, the machine forms small ice crystals, incorporates air and develops the smooth texture you expect from finished gelato.

For someone getting into the frozen dessert business, it helps to understand that a batch freezer is different from the freezer you use for storage. A storage freezer keeps finished product cold. A batch freezer actually makes the gelato, ice cream or sorbet.

Commercial batch freezers come in several formats. Countertop batch freezers can work well when space or production volume is limited, while larger floor-standing machines are designed for higher-volume production. Some combination batch freezers also combine heating and freezing functions in one system.

The freezer matters, but it does not determine the finished product by itself. Your recipe, the amount of mix in the machine, the amount of air incorporated and the point at which you extract the batch all influence the texture that comes out.

After extraction, many shops move the finished gelato into a blast freezer. A blast freezer pulls heat out of the product quickly, helping the gelato harden before it moves into storage or the display case. This step is especially useful when you are producing batches ahead of service rather than serving them immediately after extraction.

4. Harden, store and serve

After extraction, the gelato is moved into pans for hardening, storage or display depending on the shop's production process. A standard 5L metal gelato pan is common in commercial display cases, and shops may use pan liners and lids as product moves between production, storage and service.

Why is gelato served warmer?

Gelato is generally formulated to be served around 12°F to 15°F. Hard ice cream is commonly served colder, around 6°F to 10°F.

A few degrees make a noticeable difference in a frozen dessert. At the right temperature, gelato should be soft enough to work easily with a gelato spatula while still holding its shape in the pan.

Serving temperature should not be confused with the number shown on the display case controller. Case design, airflow, room temperature, pan position and how often the case is opened all influence the actual temperature of the product.

That is why there is no single display-case setting that works for every shop. What matters is how the gelato itself is behaving when you serve it.

How is gelato different from ice cream?

Gelato and ice cream use many of the same ingredients, but they are usually formulated and served differently.

Gelato generally contains less fat, incorporates less air and is served warmer. Together, those differences create its characteristic dense texture and softer consistency.

Where does gelato fit among other frozen desserts?

Gelato and ice cream are only two parts of a much larger frozen dessert category. There is also sorbet, which is generally made from fruit, sugar and water without dairy; sherbet, which includes some dairy; soft serve, which is dispensed directly from a continuous freezer; and products such as shaved ice and Italian ice that use different production methods.

If you are getting into the industry, you do not need to choose a product based on which one sounds the most traditional. Start with what you want to sell, how you want to serve it and what production process makes sense for your business.

Gelato is one option within that larger category. What distinguishes it is the combination of its formulation, relatively low overrun and warmer serving temperature.

What this means if you are opening a shop

You do not need to understand every part of frozen dessert science before making your first batch of gelato.

You do need to understand a few variables: the ingredients going into the recipe, how much air you are incorporating, how the product freezes and the temperature at which you plan to serve it.

Those decisions influence almost everything that comes later, from texture and portion size to ingredient costs and finished yield.

Once you understand those fundamentals, recipe balancing and production become much easier to learn.
